{ Healthy Gingerbread Cookies }

Hi everyone! Last Sunday we didn't have a big lunch because my mum had to work, but we decided to make some gingerbread, and we changed up the usual recipe into a healthier one. I started searching for a recipe at the beginning of December but couldn't find something great with ingredients I can find here in Marosvasarhely as well. But of course, I didn't find, so I used the recipe that I liked the most and changed it up. We doubled the ingredients and got more than 100 cookies.

INGREDIENTS: 

310 grams whole wheat flour 
2 teaspoons ground cinnamon
3 teaspoons ground cloves
Some fresh ginger (we didn't find ground ginger)
3/4 teaspoon salt
1/2 teaspoons ground black pepper
1/2 teaspoons baking soda
1/2 teaspoons baking powder
1/2 cup melted coconut oil
1/2 cup honey
1/2 cup stevia
2 eggs


     To be honest, it is not the best recipe, because it needs some changes. We added all of the ingredients and the dough didn't want to come together. It was so frustrating. The problem was that the coconut oil was way too much. I think half of it is enough!! It was really oily, so the dough would rip apart when I wanted to flatten it out. We added more flour and eggs and after some time it got better, thank God. 
     After flattening out the dough, we used our cute cookie cutters (bought them in Ikea), after which we placed them on the tray (this time we had baking paper) and put them in the pre-heated oven (175 degrees Celsius) for about 10 minutes. The repice sais put in in for 8 minutes if you want soft cookies, and 11 if you want  a crust on your cookies. We couldn't decide so we went with 10 minutes. 
     And the most exciting part, the decoration. Well as you can see we didn't inherit our mothers talent for paiting, we had such a hard time decorating them, We don't understand how others can make their cookies so nice and cute. After a full day of baking them, we didn't have the energy and let's face it the talent to make them more appealing. We used icing (egg whites with powder sugar), melted some chocolate and put loads of dried grated coconut, dried cranberries, and some edible decorations. 
     I didn't mention the taste! Well, they are really yummy, and I love that they are not so sweet. With all of the decoration it's perfect. And the great thing about them is that after eating one, you are quite full, since they are made of whole grain flour.
